Bircher, the summer porrdige

Bircher is actually an old classic invented in Switzerland by Dr. Bircher-Benner in 1890s.

It is a soaked overnight muesli which I like to call it my summer porridge. Since it’s already too hot in Barcelona I prefer going for fresher breakfast and bircher is one of my favourite!

The original recipe call for rolled oats, water, condensed milk, grated apples and lemon juice.. It can sound a bit boring for this century, so let your imagination bring this breakfast to heaven.

You could soak oats in apple juice, almond milk or any liquid you have in your fridge. In the morning just topped it with some thick yoghurt or cream and poached fruit for example. Any amazing combination you make will be the perfect start for a great day.

I love mine with almond milk, super thick coconut kefir, some strawberry compote, fresh blueberries and a beautiful combination of seeds.

Ingredients
  • 50 g rolled oats
  • 100 ml almond milk
  • 1 tablespoon coconut kefir
  • a handful berries
  • 1 teaspoon strawberry compote
  • 1 tablespoon mix seeds (sunflower, chia, sesame, pumpkin...)
Instructions
  1. Put the oats in a bowl and add almond milk. Stir and leave aside for 10-15 minutes to soften. You could leave them to soak overnight if you prefer.

  2. When ready to serve, add coconut kefir, compote, berries and seeds.
