Preheat the oven to 220ºC. Line a baking tray with parchment paper.
You could peel the sweet potatoes or leave the skin on. If so, make sure to rub well the skin under cold water to remove any dirt. Cut them into thin sticks.
Spread on the baking tray, sprinkle with paprika, oregano, salt and black pepper and drizzle with olive oil. Toss well to coat evently and arrange in a single layer so they roast properly.
Bake for 30 minutes, turning occasionally, or until sticks are browned.
