A fun way to have salmon and which kids will love, is these mini Gingery Salmon Patties. They are super tasty and the ginger gives them that tiny spiciness that I love so much!
Serve this Gingery Salmon Patties in mini bun, as a part of a Buddha Bowl or for less heavy meal serve it with some green salad.
- 125 gr wild salmon
- 3/4 tablespoon fresh ginger grated
- 1/2 teaspoon Dijon mustard
- 1 tablespoon fresh chives chopped
- sal
- black pepper freshly crashed
- baby spinach
- radish sliced
- cucumber sliced
- extra virgin olive oil
- salt
- pepper

In a food processor put the salmon and process until it's minced. Place into a bowl.

Add rest of the ingredients and mix to combine.
Divide the dough into two patties.

Heat a bit of olive oil into a pan and add the patties. Cook a couple of minutes until golden. Turn patties and cook a bit longer.

Serve it with salad, as part of a Buddha Bowl or in mini buns.
