Because is summer time and we all need quick but delicious, healthy and refreshing treats, I want to share with you a yummy way of cooling down this hot months, enjoying a delicious Watermelon Cherry granita.
It take just 5 minutes to make and not cooking or oven is required, (who want to have the oven on when it’s 35º outside!). Also you just need 2 ingredients to make it and all them are natural which leads to a more satisfying and nutritious feast.
Watermelon and Picota Cherry granita is a combination of my two favourite summer fruits.
Picota cherry is a special variety of sweet cherry grown in a specific region of Spain (Valle del Jerte). When picked, picota cherries are naturally separated from their stalks. It’s texture is smooth, firm and a very hard body. The bone is bigger than in classic cherries and its colour is much darker, almost black. Picotas are much sweeter that’s why they are used for desserts, compotes and other sweet creations.
Watermelon is my way of hydration in summer, but you already know that! I have big bowls of watermelon while watching a movie or even while working in front of the computer, I love it when the juice trickles down the chin . I use it on salads, juices and sometimes I just nail it a wooden stick, freeze it and eat it at a lollipop. Today I want to give it a upgrate, making it more delicate and sophisticated while still simple and quick to make.
There are two ways of making this gratina. Your could first freeze the fruit and then blend it or first blend and then freeze.
If you are not good on planning, try to keep always fruit in your freezer, so then you just need to blend and you will be able to enjoy it straight.

- 150 gr Picota cherries seedless
- 500 gr watermelon diced
Put fruits in a food processor and blend.
Pour in a container and freeze.
