Ingredients
1bananasmashed
2eggsbeaten
50gramssheered coconutor coconut flour
blueberries, strawberries, bananayour favourite fruit
Honey, maple syrupor any other sweetener you like
Instructions
Mash the banana with a fork.
Add eggs, coconut and any fruit you’d like. Mix well.
Heat a pancake pan and add a bit of olive oil.
Over medium heat, pour a tablespoon of the mixture and shape into a circle. Leave a couple of minutes and flip it over.
Cook for another couple of minutes until golden.
Serve with fruit, yogurt, syrup or your favourite toppings.
