Easy and healthy options while on vacation
Firstable cook quinoa. Rinse quinoa under cold water, drain and put in a saucepan with 300ml of water or vegetable stock. Bring to boil, reduce heat and leave it simmer until liquid is absorved, 20 minutes aprox.
Turn off the heat, cover and leave it to rest for 5 minutes.
Place sliced onion, red peppers and half of the cherry tomatoes over a oven tray, drizzle with olive oil and salt and roast 15-20 minutes at 180ยบ.
While quinoa is cooking and peppers are roasting, prepare cucumber salad by mixing sliced cucumber, crushed chilli, chopped basil, a drizzle of olive oil and salt.
When quinoa is cooked and cool, mix it with grated carrot, chopped tomatoes, cucumber and basil. Pour some salt, olive oil and lemon and mix it well.
Take a bowl and place quinoa, cucumber salad, roasted peppers and onions and top it with boil egg.
