Whisk in the eggs, almond milk and chai spice. If you are using chai tea, warm the milk and add the tea bag, cover and let infuse for 5 minutes. Pour into a deep tray and lay all slices of bread in the mixture. Leave to soak for a minute on each side.
Put a pan on a medium heat and add a bit of oil, add a slice of bread and cook for 2–3 minutes on each side until golden and crisp, taking care when you flip it, as the bread will be quite delicate. Repite with the rest of the slices.
Serve on plates with coconut yogurt, berries, apple compote or any other topping you like
