Quick, simple and delicious.
First prepare avocado sauce. Put avocado, lime juice, garlic cloves, fresh coriander, salt and pepper in a hand blender or food processor and blend until smoothie. If it's too thick you could add some extra virgin olive oil or water until it reach a spreadable texture.
With a spiralizer, spiralize the zucchini. You could use a grater instead. Put into a bowl with cherry tomatoes, lambs lettuce and hemp seeds. Add the sauce and mix well until everything gets coated with the sauce.
