Mix ground almonds, olive oil, rice malt syrup and vanilla essence and try to get a ball. If it doesn't stick together add few drops of water.
Add chocolate chips and mix.
Divide the dough in 12-14 pieces, make a round ball with them and put over parchment paper and flatten up a little bit with your hand.
Decorate with flaked almonds.
Bake at 160ÂșC during 20-30 minutes.
Be careful they don't get very brown.
Let them cool before to enjoy.
