Chocolate and almond cookiesGetting back to everyday routine can be a bit easier with some of these delicious Almond Chocolate Cookies. 

Don’t know about you, but I was waiting for more than 2 months for Easter holidays to come and now they are already gone  

And the truth is even if you enjoy and have fun at work, everyone loves being on holidays!! 

Hopefully you were able to enjoy those few days. Hope you made the most of them and are back with batteries fully charged. 

If you follow me on Instagram, you probably know right now I spent few days in Menorca, one of the Balearic Islands. I have been there few times already (lucky me, my parents in law have a vacation house there 😀 ), but these time I was able to discover a new Menorca. 

A very different Menorca. A really green island with tons of flowers of all colours. Daisies, poppy flower, fennel flowers growing on the side of the roads… So beautiful and peaceful. Weather was lovely too, sunny but not super hot, so we were in flip-flops and shorts all day. Far less tourist make it easier to move around and to enjoy wild beaches like Macarella or Macarelleta (the ones in the photo), and many others where still nude, without deckchairs or sunshades.

So yes, even been Barcelona a lovely, sunny and very cool city; it was hard very hard to walk again in the crowded streets of Barcelona. So all day yesterday, I was thinking what to bake to make my day happier. And ta-daaaah! Almond Chocolate Cookies always are a great choice 😛

They are super satisfying and healthy. Packed with good almonds which will keep you full for longer. Dark chocolate will stimulate your brain and make you feel better. They are not as sweet as conventional cookies, so if you want you could boost it taste adding cinnamon, ginger or cardamom. And as a bonus, they are vegan and made with rice malt syrup which is fructose free, great for those who is trying to avoid sugar 😉

 

Almond Chocolate Cookies

Course: Cookies, Snack
Servings: 12 cookies
Ingredients
  • 150 gr ground almonds
  • 3 tbsp extra virgin olive oil
  • 40 ml rice malt syrup
  • 1 tsp vanilla essence
  • 50 gr dark chocolate chips
  • 1/2 handful flaked almonds
Instructions
  1. Mix ground almonds, olive oil, rice malt syrup and vanilla essence and try to get a ball. If it doesn't stick together add few drops of water.

  2. Add chocolate chips and mix.

  3. Divide the dough in 12-14 pieces, make a round ball with them and put over parchment paper and flatten up a little bit with your hand.

    Decorate with flaked almonds.

  4. Bake at 160ºC during 20-30 minutes.

    Be careful they don't get very brown.

    Let them cool before to enjoy.
