¡Celebrate Pancake Day with this amazingly delicious banana and coconut pancakes! You need just 3 ingredients, a pan and your favourite toppings.

Since I discovered the tradition of Pancake Tuesday while my years in Dublin, haven’t been a year I haven’t celebrate it, an excuse to eat more pancakes. Just love it!

This is a Christian tradition. It’s hold on Tuesday before Ass Wednesday, the first day of Lent, so to prepare for the deprivation of food in the following 40 days before Easter. They had to use up eggs, sweets and milk, so they decide to hold a pancake day.

If you are not much into religion, you must know that this tradition might originate in a pagan holiday, when eating round pancakes (symbolising the sun) was a way of celebrating the arrival of spring. So let’s welcome the spring!

Out as it was, Pancake Tuesday is the perfect excuse to get a great breakfast feast. The banana and coconut pancakes we bring you today are a healthier way to eat pancakes. They are super easy to make, just need 3 ingredients, taste delicious and are super nutritious.

I use sheered coconut, but if you prefer a smoother dough you could use coconut flour instead. Using coconut in place of traditional flour, make these banana and coconut pancakes gluten-free. It’s also good for diabetics because doesn’t make your blood sugar rise as quick as refined white flours.

Banana is usually considered a forbidden fruit because of its high sugar content. It’s is truth that it’s a very energetic fruit, but we have to change the chip (myself included). Banana is rich in potassium which helps preventing muscle crumps and maintains normal blood pressure. In baking banana is great because adds moisture to the dough, which means you can reduce the amount of oils and sugar.

Protein is one of the most essential nutrient of our diet (it helps build new and repair old tissue). Eggs are one of the best source of complete high quality protein. It’s also rich in vitamin A, B12 and folate acid. They improve performance and help to promote brain health.

Banana and coconut Pancakes

3 ingredients pancakes, great for when you have an empty fridge!

Course: Breakfast
Servings: 2 people
Ingredients
  • 1 banana smashed
  • 2 eggs beaten
  • 50 grams sheered coconut or coconut flour
  • blueberries, strawberries, banana your favourite fruit
  • Honey, maple syrup or any other sweetener you like
Instructions
  1. Mash the banana with a fork. Add eggs, coconut and any fruit you’d like. Mix well. Heat a pancake pan and add a bit of olive oil. Over medium heat, pour a tablespoon of the mixture and shape into a circle. Leave a couple of minutes and flip it over. Cook for another couple of minutes until golden. Serve with fruit, yogurt, syrup or your favourite toppings.
