Chai French toast

If you have been following my Instagram, probably you have realised by now that I’m a morning person and that I loooove breakfast!!

It’s my favourite meal of the day, and actually what I eat first thing in the morning will set my mood and intentions for the rest of the day. That’s why I always go for a big glass of water and a delicious and nourishing breakfast, it helps me to get on with my day.

Porridge, granola and toast with yogurt, fruit, avocado or fresh tomato are my usuals for weekdays, but on the weekend I tend to prepare more indulging breakfast as pancakes or today’s recipe Chai French Toast.

French toast in English, torrijas in Spanish or pain perdu in French, which means “lose bread” because it’s made with stale bread, but it’s also wonderful made with croissant or brioche.

The version I want to show you today is simple and deliciously flavoured with chai spices. Coconut yogurt and wild berries or apple puree with bee pollen are my favourite toppings, but you could serve them with whatever you like. For vegans you can make the French toast with extra almond milk and skip the eggs.

Ingredients
  • 2 eggs
  • 125 ml almond milk unsweetened or any other plant based milk
  • 1 teaspoon of chai spice or a chai tea bag
  • 4 thick slices of good bread or brioche or croissant
  • olive oil
  • 2 tablespoons coconut yogurt
  • berries or apple compote
  • runny honey to serve (optional)
Instructions
  1. Whisk in the eggs, almond milk and chai spice. If you are using chai tea, warm the milk and add the tea bag, cover and let infuse for 5 minutes. Pour into a deep tray and lay all slices of bread in the mixture. Leave to soak for a minute on each side.

    Put a pan on a medium heat and add a bit of oil, add a slice of bread and cook for 2–3 minutes on each side until golden and crisp, taking care when you flip it, as the bread will be quite delicate. Repite with the rest of the slices.

    Serve on plates with coconut yogurt, berries, apple compote or any other topping you like

SERVES 2

2 eggs

125ml unsweetened almond milk

1 teaspoon of chai spice or a chai tea bag

4 thick slices of good bread or brioche

olive oil

2 tablespoons good coconut yogurt

Wild berries or apple compote

runny honey, to serve (optional)

Get all your ingredients and equipment together.

Break the eggs into a bowl and whisk in the almond milk and chai spice. If you are using chai tea, warm the milk and add the tea bag, cover and let infuse for 5 minutes. Pour into a deep baking tray and lay all four slices of bread in the mixture. Leave to soak for a minute on each side.
