Banana Bread

Banana Bread, a classic you can find in nearly any cafe or pastry shop.

My first experience with banana bread was in Dublin. It was moist, sweet, banany and with chocolate chips, simple delicious and addictive. Since then, I have tried many versions, all them really good, but even homemade (that supposes to mean, healthier) most of them loaded with refined white flours and sugar.

This Healthier Banana Bread, is a gluten-free and refined sugar-free version. It has a wonderful texture and is depth of flavour. You can serve it toasted and it’s amazing with coconut yogurt and drizzle with a little bit of honey.

Bananas used to be labeled as forbidden fruit, but with no reason. Bananas are a great source of potassium, which helps maintaining normal blood pressure and heart function. It is a favourite among athletes since it prevents muscle cramps. In baking, banana adds moisture and sweetness to the dough so you can reduce the amount of oil and sugar. Almonds are another incredible nutrient dense ingredient. They contain healthy omega 3 fatty acids, vitamin E, magnesium and they are a great source of calcium for those following a vegan diet.

Servings: 1 loaf
Ingredients
  • 300 gr peeled banana served one for decoration
  • 3 happy eggs
  • 60 ml honey and more for serving
  • 60 ml olive oil or coconut oil
  • 200 gr ground almonds
  • 25 gr flaxseeds
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1 tablespoon lemon juice
  • 1/2 teaspoon cinnamon
  • chopped almonds for decoration
  • coconut yogurt for serving
Instructions
  1. Preheat the oven at 160ºC. Line a mold with parchment paper.

  2. Blend bananas in a food proccessor or with a hand blender.

    In a large bowl, put all ingredients and with a spatula, mix until well combined.

  3. Pour mixture into the lined mould.

    Cut reserved banana in half, lengthwise and place it over the top. Sprinkle some chopped almonds. 

  4. Bake at 160ºC for 45-60 minutes.
