Overnight porridge is great for those who are not morning persons or for those of us who like to prepare things ahead. And it is one of the easiest and healthiest breakfast to grab and go.

When I started my new job in Barcelona one of the thing I missed more was my morning porridge. I consider myself a morning person, hardly never need my alarm oclock to wake up on time, but taking time for preparing my first meal in the morning is another thing. This is why this overnight porridge is the best solution for a nutritious breakfast.

Also is ideal for warmer months, since you don’t even need to cook it. If this is the case, the proper way to name it, is bircher muesli.

The method is simple, cover your oats with any liquid you like, even juice or yogurt, and leave them soak overnight. In the morning, warm it up, or not, and topped with your favourite fruits, butters and sweeteners.

Lately I put turmeric on everything, curries, quinoa, lattes and last week I have tried on porridge and the result was sooo good I couldn’t wait to share it with you.

Grab and go porridge

Course: Breakfast
Servings: 2 people
Ingredients
  • 100 gr rolled oats
  • 240 ml any kind of milk
  • 25 gr flaked almonds
  • 2 tablespoons maple syrup
  • seeds optional
  • Banana, berries or any other fruit
Instructions
  1. The night before place oats, milk and syrup in a bowl and let soak. In the morning top with any fruit and seeds.
