We are already into spring, the sun is brigher, the temperature is raising and that means lighter meals, more salads and chilled soups. Also it means less clothes and more naked skin exposed.

If you have been ‘good’ during winter, not overindulging your body with excess of food and you have kept doing exercise regularly. Probably you don’t really bother with the seasonal wardrobe changing neither you are having a freak moment right now.

But if you have let yourself falling into hibernation last few months,probably you are finding now few extra kilos which don’t belong to you.

Last winter I had a few stressful months, more than usual, which lead me into anxiety and overeating. I still ate lots of veggies and wholegrain foods, but many times I lost conscious and craved sugary stuff (my big weakness). Also to make it worst, I stopped doing vigorous exercise. I just joined a couple of yoga class per week, which by the way, it helped me quiet a bit in stretching and release that anxiety.

All this has made me gain a bit of weight, not a huge deal, but just enough to don’t feel comfortable with my body anymore, I feel bloated the most of the times and my esteem a bit down.

But don’t worry, last couple of weeks I had an ‘aha moment’ and said ‘it’s enough, no more mindful-less’. When I find myself with a sugary cookie in my hand I say to myself, “wait, do you really want that cookie? Are you really going to enjoy it? Or just you will devour it and feel guilty afterwards?” And it actually works.

To get motivated about exercise I just try to think about how good I feel after doing it, fresh and light. I personaly prefer doing it in the morning, and actually I know that the day I go running or do a session of tabata, my food intake is much cleaner that those days I don’t exercise. So looks everything is falling into the right place.

And here is when the beautiful salad I was talking to you at the beginning, make sense. It is sexy, delicious and fresh. The best part is after eating a big bowl of this zucchini noodle salad you will feel super satisfied and happy.

It is low in carbs, low in fats and great for those avoiding gluten. The lemon give it a fresh and summery flavour and tuna just provide you with great amount of complete protein.

Delicious and super sexy zucchini noodle salad. Great if you want a low carb meal and of course if you just want to enjoy a fresh and super tasty salad.

Servings: 2 people
Ingredients
  • 2 tbsp olive oil extra virgin
  • 1 garlic clove
  • 1 tbsp capers
  • 1 tsp lemon zest
  • 2 tbsp lemon juice
  • 500 gr zucchini noodles use a spiralizer or just a grater
  • rocket
  • 200 gr canned tuna in olive oil
  • 1 dried chili pepper
  • 1 pinch salt
  • 1 pinch black pepper
Instructions
  1. Heat the oil in a pan over medium-low heat. Add the sliced garlic, capers and lemon zest. Cook for a couple of minutes until golden.

    In a big bowl, mix zucchini noodles, lemon juice, chili pepper, salt and pepper. Drizzle with the garliky oil and mix well.

    Serve with rocket and tuna.
