Zucchini Noodles with Avocado Sauce

Last weekend was one of those lovely enjoyable weekends. A kind of weekend when you don’t have much planned but everything fall into place.

Weather was beautiful, warm and sunny. A relax apperitive at a quiet terrace’s cafe near home. An afternoon visiting friends and their new baby born 😍. A super gourmet dinner at the new restaurant in the neighbourhood. A walk in the Greek Theatre Gardens in Montjuic. A lovely lunch in one of my restaurant to try list. Nothing big but everything comforting and pleasant.

Usually my plans for weekends are go into the kitchen, try recipes, play with new ingredients, meal prep for the following week or writing posts for the blog. I really enjoy all of these, but I have to admit that the weather right now make it very difficult to want to be indoors.

Although this time I let myself enjoy the freedom I have to admit I had some freaky feelings of ‘Gooood I want to cook something!!!‘ Yes, I know, I am weird… So when I arrived home went into the kitchen, tied the apron around my waist and started to mess a little bit around 😛 Don’t worry, this time nothing to complicated.

It was something quick, simple but still delicious and yummy. Zucchini noodles with avocado sauce. 3 minutes to spiralized, 5 minutes to blend the sauce, 2 minutes to build it up and voilà an amazing dinner was served on the table for a comforting end of the weekend.

Quick, simple and delicious.

Course: Main Course, Salad
Servings: 2 people
Ingredients
  • 2 zucchini medium
  • 8-10 cherry tomatoes halved
  • 2 handfuls lamb's lettuce
  • 1 handful hemp seeds
Avocado Sauce
  • 1 avocado
  • 1 lime
  • 1 garlic clove
  • 1 bunch fresh coriander
  • extra virgin olive oil optional
  • water optional
  • salt
  • pepper
Instructions
  1. First prepare avocado sauce. Put avocado, lime juice, garlic cloves, fresh coriander, salt and pepper in a hand blender or food processor and blend until smoothie. If it's too thick you could add some extra virgin olive oil or water until it reach a spreadable texture.

    With a spiralizer, spiralize the zucchini. You could use a grater instead. Put into a bowl with cherry tomatoes, lambs lettuce and hemp seeds. Add the sauce and mix well until everything gets coated with the sauce.

    Sirve and enjoy!!
