Cauliflower Pate

Few weeks ago I was working in an event. I had to make veggies sexy for 15 working man who straggle to follow healthy eating habits and who think eating well means just eating greens and salads.

I took a risk using cauliflower, knowing that most of the people associate cauliflower with a horrible smelly odor. But I knew they wouldn’t be able to resist to a beautiful, delicious cauliflower ‘fried rice’ with chicken. And in fact they didn’t, they even repeated and said they had never tried cauliflower like that. They loved it. But I will tell you all about this in another post… 

All this was just to tell you that I had a couple of cauliflower left over after the event. Since I’m the only one at home who enjoys it, I decided to make a delicious paté that I could pack and give for present to family and friends.

This cauliflower pate is super easy to make. It’s tasty, yummy and smooth. You will be surprise by it flavour, so intense and light on the same time. You could even make it with any boiled/roasted cauliflower leftovers.

Cauliflower works as an anti-inflammatory that support digestion and boost your immune system. It’s a wonderful source of potassium which help with muscle contractions and it’s also great with lots of cancer-fighting agents.

Tahini is a paste made from sesame seeds. It’s super versatile and can be used in sweet and savory dishes. It helps with liver detoxification. It’s reach in magnesium, potassium, calcium and vitamin E and group B. It’s a great source of protein and high in good fats.

You could enjoy the creamy cauliflower pate on its own, with veggie crudités, spread on bread, on a sandwich or in a nori wrap. Not a big fun of cauliflower? Give it a try anyway, you will love it! Cauliflower Paté

Delicious vegan paté perfect for spreading on toast or just enjoy it directly with a spoon

Course: Side Dish, Snack
Servings: 1 large bowl
Ingredients
  • 1 cauliflower cut into florets
  • 125 g tahini
  • 1 garlic clove
  • 1 lemon for juice
  • 1 handful fresh parsley
  • 100 ml extra virgin olive oil
To Serve
  • Veggie croudites carrots, cucumber, cherry tomatoes...
  • crackers
Instructions
  1. Steam cauliflower for 5 minutes and cool completely.

    In a food processor, add all ingredients and process until mixture is smooth or reaches hummus consistency.

    Taste and adjust seasoning.

  2. Serve with veggies and crackers or just spread on toast and sandwiches
