Nori Wraps w Cauliflower Paté

Nori wrap

I remember the first time I had a sandwich without bread. Yes, that’s right, no sliced bread, baguete, pita or anything bready. It was in Cambodia, 4 years ago, at the café where I worked as a Culinary Assessor.

It was a beautiful roll wrapped with nori paper instead of bread. I found it to be a brilliant idea for those who wanted a gluten free, low carb version, or who even just wanted to enjoy nori in other way different from sushi.

Since then I saw on Pinterest similar versions, portobello mushrooms instead of bread slices, toasted sweet potato slices or collard greens.

Today I fill it with cauliflower paté, super thinly carrots and zucchini sticks, topped with sprouts and sprinkle with sesame seeds. You could serve it with a tahin dressing as I did or opt for a peanut one to enhance the Asiatic remembers of this beautiful and healthy idea. Also is the best way I can think of to celebrate World’s Vegan Day!

What are and what to do with Nori papers

They are made by shredding edible seaweed and then pressing it into thin sheets. They most common way of using it is in sushi, but you could enjoy nori papers as a crispy snack baking it for few minutes. You could cut it up and add it to your miso soup or make a delicious seasoning by cutting it in very small pieces and mixing it with some sesame seeds and salt.

Nori is the best source of vitamin B12 for vegetarians. They are high in iodine, which helps regulating the thyroid gland. They have anti-cancinogen properties and are loaded with zinc, copper and selenium wich destroy free radicals.

Nori Wraps w Cauliflower Paté & Veggies
Course: Main Course, sna
Servings: 2 people
Ingredients
  • 4 nori papers
  • cauliflower paté*
  • 2 carrots grated or cut in thin julienne
  • 1 zucchini grated or cut in thin julienne
  • 2 handfuls sprouts
  • sesame seeds to garnish
Tahin Sauce
  • 2 tablespoons tahin
  • 2 tablespoons water
  • 1 tablespoon lemon juice
  • salt
Instructions
  1. Place a nori paper over the table, having one corner pointing at you.

  2. Spread a large spoonful of cauliflower paté in the middle of the nori paper.

  3. Top with carrots, zucchini and sprouts.

  4. Close the wrap by folding the bottom corner first and the the sides. (See the photos for a better guideline). 

  5. Do the same with the other nori papers.

  6. Sprinkle with some sesame seeds

  7. To make the sauce, just put all ingredients into a bowl and mix well.

  8. Eat inmediately or the nori paper will go soggy.
