Hi guys!! How is your Easter holidays going?

Mine pretty great. Sunny, quiet and relaxing time in Menorca, is all what I needed after a couple of crazy months at work. So I tuned to holiday mood☀🌴😎 as soon as I arrived to the airport and hopefully will last long after I get back.


Some may think that keeping a healthy routine during holidays is imposible. Truth is, that it may be harder. Holidays usually involve traditional treats loaded in sugar; we eat out more often or we may be staying at a full board hotel.

Don’t let these ‘small inconvenience’ ruin all your daily life efforts. Years ago, I used to see holidays as time to over indulge and eat all the staff I could, which lead me to feel overloaded, bloated and disgusting after few days. So I have learnt to enjoy those little moments, discovering local foods, new restaurant, traditions, etc but still taking care of what I eat.

Lately, I’ve been staying in apartments or full equipated houses during my holidays. It is so much fun to see other peoples houses and as a bonus, I can still enjoy my cooking. Although many times is a big big challenge. It is easy to cook in your own kitchen, my cupboards probably are full of ingredients, spices and tons of specific utensils, spiralizer, fine grater siever, blender… But when you have to cook in others stranger kitchen is all an adventure! 

First day I use to go to a farmer’s market and load my basket with fresh and local fruit and veggies, couple of staples as cooked chickpeas, quinoa or almonds, so I can make a nutritious and delicious fresh dinner in no time. Kitchens in vacation houses use to have basic ingredients as olive oil, vinegar, salt and if you are lucky some dry herbs. So on holidays is when I enjoy more, simple cooking, tasting the natural flavour of vegetables for example.

With my findings at the market, yesterdy I was able to create these colourful bowl with quinoa salad, spicy cucumber, roasted peppers with onions and a boil egg for extra power. And today lunch was chickpeas with tuna, and careot and cucumber salad. Really doesn’t matter what you put into your bowl if it is balance, fresh and natural. You could even pack it in a take away container and enjoy it on the beach, during a trek in the mountain or wherever you want.

Easy and healthy options while on vacation 

Course: Main Course
Servings: 2 people
Ingredients
  • 100 gr quinoa
  • 1 carrot grated
  • juice of 1 lemon
  • 1 cucumber thinly sliced
  • 1 chilli pepper dried
  • 1 red pepper medium dices
  • 1 onion thinly sliced
  • 100 cherry tomato halved
  • 2 tbsp extra virgin olive oil
  • basil leaves
  • 1 egg boiled
  • 300 ml water or vegetable stock
  • salt
Instructions
  1. Firstable cook quinoa. Rinse quinoa under cold water, drain and put in a saucepan with 300ml of water or vegetable stock. Bring to boil, reduce heat and leave it simmer until liquid is absorved, 20 minutes aprox. 

    Turn off the heat, cover and leave it to rest for 5 minutes.

  2. Place sliced onion, red peppers and half of the cherry tomatoes over a oven tray, drizzle with olive oil and salt and roast 15-20 minutes at 180º.

  3. While quinoa is cooking and peppers are roasting, prepare cucumber salad by mixing sliced cucumber, crushed chilli, chopped basil, a drizzle of olive oil and salt.

  4. When quinoa is cooked and cool, mix it with grated carrot, chopped tomatoes, cucumber and basil. Pour some salt, olive oil and lemon and mix it well.

  5. Take a bowl and place quinoa, cucumber salad, roasted peppers and onions and top it with boil egg.


  6. Enjoy healthy meals while you are on vacation!!
