Asparagus season is coming to an end, so I am gorging myself on them. I just add them to nearly anything, into soups, salads, omelets, pizzas… but one of my favourite ways to enjoy them is just grilled in the pan.

Another thing that I am mad about is having brunch for dinner :P, and most specially about egg dishes. Actually I should say they are getting into my dinner plate more and more often. This is because they are perfect for those busy days when you get at home and don’t feeling like cooking, eggs are quick to cook and are so versatile, poached, scrambled, in omelette, boiled… They also load your plate with good proteins making your dinner delicious and nutritious.

I am sure you will love today’s recipe as much as I do. It is simple. quick and so tasty. Grilled Asparagus with Egg and Parmesan, you just need three ingredients to make a winner dish.

Asparagus is a great source of betacarotene, vitamins B1, B2, C, E, K, folate and iron. It’s also reach in inulin, which helps stimulate the growth of good bacteria in the digestive system.

Grilled Asparagus with Eggs and Parmesan

Servings: 2 people
Ingredients
  • 250 gr asparagus bottoms cut
  • 2-4 eggs
  • 50 gr parmesan grated
  • salt
  • black pepper freshly cracked
  • extra virgin olive oil
Instructions
  1. Put a pan over high heat. When very hot add a drizzle of olive oil and asparagus. Turn down the heat to medium and let them cook for 10 minutes.

  2. Crack a couple of eggs over the asparagus, cover and let them cook 3-5 minutes. If you like your yolk well cooked, cook them for a bit longer.

  3. Grate parmesan over eggs, sprinkle salt and black pepper and serve immediatly.
