Lobster Roll

Lobster roll!! Can’t think of a better way to enjoy lunch by the pool!!

Actually it’s so much fun to make. Don’t be intimidated by the way Gordon Ramsay cooks and peels a lobster. He is a genius and probably we need lots and lots of practice to even just make it a quarter of how he does it. But any way you decide to peel the lobster, will be good enough to make these delicious rolls.
You can make the ‘lobster salad’ mix ahead, reserve it in the fridge and just when you are ready to have lunch built the glorious lobster roll.
You can go for the traditional recipe and use mayonnaise (don’t worry for eating a bit of homemade mayo once in a while) or go for a lower fat option using yogurt. Both ways will be delicious.
Because I wasn’t in my kitchen and didn’t have by hand all my seeds and wholemeal flours I just used white flour, they still were much better than the store-bought ones. If you don’t want to bother about making the rolls, buy some wholegrain-multicereal roll at your closest bakery
Many will consider this lunch as a not healthy dish, but as I claim in one of my first posts, it’s all about balance!

Great Lobster Rolls delicious to eat by the pool.

Course: brunch, Main Course
Servings: 2 people
Ingredients
  • 2 lobster (300g each)
  • 2 tablespoons homemade mayo or Greek yogurt
  • cos lettuce
  • 1 handful capers
  • salt
  • black pepper freshly cracked
  • 2 bread rolls, hot dog style (wholemeal if possible)
Instructions
  1. Fill a large pot with water. Add a bit of salt. Bring water to boil, add lobsters and bring back to a boil. Cook lobsters for 5 minutes. Let them cool and peel them.

  2. Slice lobster meat. Mix withcos lettuce, capers, mayonnaise or yogurt and adjust seasoning.

  3. Heat a large skillet. Toast the hot dog buns sides until golden. Transfer buns to plates, fill them with the lobster salad and serve immediately.

Recipe Notes

Lobster can be cooked one day ahead. Cober and chill. Toss with remaining ingredients on the morning or just before serving.
