Lobster roll!! Can’t think of a better way to enjoy lunch by the pool!!
Great Lobster Rolls delicious to eat by the pool.
- 2 lobster (300g each)
- 2 tablespoons homemade mayo or Greek yogurt
- cos lettuce
- 1 handful capers
- black pepper freshly cracked
- 2 bread rolls, hot dog style (wholemeal if possible)
Fill a large pot with water. Add a bit of salt. Bring water to boil, add lobsters and bring back to a boil. Cook lobsters for 5 minutes. Let them cool and peel them.
Slice lobster meat. Mix withcos lettuce, capers, mayonnaise or yogurt and adjust seasoning.
Heat a large skillet. Toast the hot dog buns sides until golden. Transfer buns to plates, fill them with the lobster salad and serve immediately.
Lobster can be cooked one day ahead. Cober and chill. Toss with remaining ingredients on the morning or just before serving.
